Instructions
The nice thing about this pancake recipe is that it only takes a few minutes to whip up! Combine dry ingredients and whisk together.
Start by combining all dry ingredients in a bowl with a whisk. Make sure there are no clumps of flour or baking soda! Nothing is worse than getting a pocket of baking soda in your pancake.
Next, mix wet and dry ingredients together gently until they form a thick and airy batter. Let the batter rest for 5-10 minutes.
The rest time is very important for this batter! Flours made from ancient grains usually take longer to absorb water than traditional wheat. A few minutes of rest time allows the texture of the dough to stabilize.
While your dough is resting, heat a skillet on medium heat. When the batter is ready, scoop quarter-cup-sized portions of batter onto the skillet to cook. The first side will take around 2 minutes to cook. When it is ready to flip, you’ll see bubbles forming and popping on the top side. When it’s ready, flip the pancake and cook on the other side for about half the time, around a minute. Stack up your pancakes and enjoy with your topping of choice!
Topping Options For Einkorn Pancakes
These pancakes are very satisfying with even the simplest topping, but sometimes you just want a little something extra. Here are a few ideas that we’ve enjoyed!
Berries and whipped cream – This is a light and refreshing topping. We usually pair it with a little real maple syrup. So yummy!
Apple sauce and peanut butter – We enjoy this on chilly fall mornings. It’s rich and hearty!
Apple Compote – This combo is an extra special treat. Adding a little cinnamon to the compote also makes it a great fall treat!
Storing Leftover Einkorn Pancakes
These pancakes are best served fresh, but if you want to save some for later, keep them in an air tight container.

Ingredients
- 560 gms Einkorn flour - 6 cups of flour
- 3 T Baking Powder
- 2 t Salt
- 3 T Coconut Sugar
- 3 Eggs
- 1 Cube of Butter - Melted
- 3 C Milk
- 1 C Water
Instructions
- Measure dry ingredients into a bowl and whisk.
- Add in wet ingredients and whisk until combined.
- Let batter rest for 5-10 minutes.
- Heat skillet on medium or medium-high heat.
- Pour 1/4 of a cup of batter onto the skillet and cook untill bubbles form and pop on the top.
- Flip and cook on the other side for about half the time the first side was cooked.
