A cliché worth perpetuating, we give you chicken noodle soup! Maybe it’s because I’m feeling under the weather, but this recipe seems particularly timely. When spring rolls around and the snow begins to melt, I inevitably get sick.

 

There is some evidence to suggest that bone broth really can help with illness, but even if it didn’t, there’s something comforting about a warm bowl of chicken noodle soup when you’re sick. Not to mention, it’s delicious any time!

 

Pasta is one of those things that’s just so easy to pour from a box, but homemade pasta is so good, and you get to decide the ingredients you’re comfortable with. We’re huge fans of Einkorn pasta and want to share it with all of you.  It can be made with either Organic Whole Grain Einkorn Flour or Organic All-Purpose Einkorn Flour and turns out perfectly with either one.

We understand that homemade pasta is a bit of an endeavor, hence the HUGE soup recipe. Even if you don’t have many mouths to feed, soup is a great thing to freeze and break out on those crazy days or when you’re sick and don’t feel like cooking. Another thing you can do is make more pasta than you need, and then dry and store what you don’t use. With the classic sick person dinner, prepping ahead of time seems advisable.

 

 

 

Homemade noodles may seem daunting, but they are actually very simple. With only four ingredients, you’ll have it all mixed up in no time. A pasta press is an inexpensive tool that is probably worth the investment. It’s cheapest and easiest to store bulk grains, so if you have a way to make your own pasta, you’re covered in an emergency. Remember a time when food was flying off the shelves and some things were really hard to come by? Fear no more! It feels good not to have to rely on grocery stores.

 

If you don’t have a pasta press you can still make this recipe. Your noodles will most likely be thicker, but no less delicious! Just roll them out as thin as you can and cut them thin with a pizza cutter. Easy peasy!

 

We used canned chicken for this recipe because it’s easy to store and incorporate, but it’s definitely not required. If you have leftover chicken or want to cook chicken for this recipe, be our guest! You can even cook the chicken in water and seasonings in a crockpot and use the both the chicken and the broth in this recipe.

 

Most of these ingredients don’t need to be exact. Throw in whatever you have and it will be just wonderful!

Einkorn Chicken Noodle Soup

Nothing beats a bowl of chicken noodle soup when you’re feeling under the weather or just craving some comfort food. This Einkorn Chicken Noodle Soup recipe uses homemade Einkorn noodles, chicken, and fresh herbs and vegetables to make a hearty and healthy soup that is sure to warm the body and the soul. Ingredients

Noodles

Soup

  • 1 batch Einkorn noodles
  • 1 white onion diced
  • 2 clovers garlic minced
  • 2 tbsp coconut oil
  • 2 cup carrots sliced
  • 2 cup celery sliced
  • 2 quart chicken broth
  • 1 quart water
  • 2 can shredded chicken 24oz
  • 1 tbsp dried parsley
  • salt to taste
  • 1/2 tsp pepper

Instructions

Noodles

  • Mix 1 1/2 cups of flour, eggs, salt, and water.
  • Add the remaining cup of flour to the dough. You may need to add more until it cleans the sides of the bowl.
  • Knead the dough for ten minutes.
  • Let it rest for ten minutes.
  • Sprinkle the dough with more flour. Roll it out into rectangle as thin as you can manage.
  • Slice the rolled out dough into strips of the desired length and thickness with a pizza cutter OR use a pasta press if you have one. Leave the noodles on the counter to dry while making the soup.

Soup

  • Sauté the onions and garlic in coconut oil.
  • Add the carrots, celery, chicken broth, and water to the onion and garlic.
  • Bring to a boil. Let it boil until the vegetables are cooked.
  • Add the noodles, chicken, parsley, salt, and pepper and let it boil until the noodles are cooked.

Notes

For best results measure the Organic Einkorn Flour in grams using a kitchen scale
