In fact, for most birthdays and special occasions, breakfast crepes are the requested dish. The batter is easy to make and the finished product can be used in so many ways.

Ingredients for Einkorn Crepes
Whole Grain Einkorn Flour – We usually mill our flour fresh using the Mockmill 200, you can also purchase whole Einkorn flour at our online store
- Eggs – Crucial for the classic crepe texture
- Milk – Also a big texture component, we typically use whole milk but whatever you should work
- Butter – The butter should be melted but not browned, this helps with the light flavor of the crepes
- Water – Last of the liquid
- Salt – Punches the flavor up just a bit
How to make Einkorn Crepes
Though crepes might sound intimidating to bite off, they are easier to make than you’d think.
The first step is to create the batter by simply combining all of the ingredients. We typically use a blender, but you can do it with a whisk and mixing bowl.
Next, the batter needs to rest for a bit. Leave it for about an hour to allow the batter to release the air bubbles it developed while mixing and thicken slightly.
When your batter is ready to be cooked, heat a skillet on medium or medium-high heat. The size of the skillet you use will depend on how large you want your crepes. We used a 12-inch skillet and got 12 crepes.
To test if it’s hot enough, you can dribble a little water on the pan. If the water forms small droplets that bounce around the pan, you know it’s ready to start cooking. Once you start cooking your crepes, you may need to adjust the heat a bit to keep them from cooking too quickly.
When your skillet is hot, grab the handle of your skillet and pour a small amount of batter in the center of the pan. Quickly swirl the batter around the bottom of the pan is coatted with batter. The quicker you complete this action, the better.
The key with crepes is to keep them as thin as possible. It may take a couple tries to find the right amount of batter for the size of skillet you are using. Start with about a fourth of a cup.
Cook the crepe for 30-60 seconds on the first side. Then, use a thin spatula to lift the edges of the crepe and flip it. Cook the second side for 30 seconds.
Fill the finished crepes with a filling of your choice and enjoy!
How to Make Crepes Ahead of Time
The crepes don’t save super well once they have been baked. You can keep them in a zip lock bag, but you’ll want to put parchment paper in between each crepe or they will likely stick together. A better option would be to make the batter the day before, cover it, and place it in the fridge. Leave the cooking for the day you plan to serve the crepes.

Einkorn Crepes
Ingredients
- 4 Eggs
- 1 ¼ C Milk
- ¼ C Water
- 3 T Butter - Melted
- 1 ½ C Einkorn Whole-Grain Flour
- ½ t Salt
Instructions
- Combine all ingredients in a blender or with a whisk and mixing bowl. Don't over-mix.
- Let batter rest for 60 minutes.
- Heat a skillet on medium or medium-high heat.
- To cook your crepes pour a small amount of batter onto the center of the pan and quickly swirl the batter around until the bottom of the pan is coated with batter.
- Cook the first side for 30-60 seconds. When it's ready to flip, the edges of the crepe will easily lift from the pan.
- Flip the crepe and cook on the other side for 30 seconds.
- Top your crepes with filling of choice.
