Einkorn German Pancakes
Ingredients
- 3 Large Eggs
- ⅓ Cup Milk
- 1 Tbsp Sugar
- ⅛ tsp Salt
- ½ tsp Vanilla
- ½ Cup Organic All-Purpose Einkorn Flour
- 5 Tbsp Butter
Instructions
- Preheat the oven to 400 degrees.
- As the oven preheats, put the butter in an ungreased 9 by 13 pan and place in the oven, just until the butter is melted.
- In a blender, add the eggs, milk, flour, salt, and vanilla and blend until smooth.
- Pour the batter into the baking dish and place in the oven. Bake for 20 minutes or until the edges are golden and puffy.
- Serve immediately with your favorite syrup, jam, or a sprinkle of powdered sugar.

This was delish! We used chocolate chips….. because why not! It reminded me of popovers. I used toasted coconut almond milk and half ghee/ half butter. I baked it 2 or 3 minutes more, I think that was because of the ghee.
