Einkorn Chicken Noodle Soup

Ingredients

Noodles

  • 300 grams einkorn flour about 2 1/2 cups
  • 2 eggs
  • 1/2 tbsp salt
  • 1/4 cup water

Soup

  • 1 batch einkorn noodles
  • 1 white onion diced
  • 2 clovers garlic minced
  • 2 tbsp coconut oil
  • 2 cup carrots sliced
  • 2 cup celery sliced
  • 2 quart chicken broth
  • 1 quart water
  • 2 can shredded chicken 24oz
  • 1 tbsp dried parsley
  • salt to taste
  • 1/2 tsp pepper

Instructions

Noodles

  • Mix 1 1/2 cups of flour, eggs, salt, and water.
  • Add remaining cup of flour. You may need to add more until it cleans the sides of the bowl.
  • Knead for ten minutes.
  • Let rest for ten minutes.
  • Sprinkle with more flour. Roll out into rectangle as thin as you can manage.
  • Slice into strips of the desired length and thickness with pizza cutter OR use pasta press if you have one. Leave on counter to dry while making soup.

Soup

  • Saute onions and garlic in coconut oil.
  • Add carrots, celery, chicken broth, and water to onion and garlic.
  • Bring to a boil. Let boil until vegetables are cooked.
  • Add noodles, parsley, salt, and pepper and let boil until noodles are cooked.
