Mix 1 1/2 cups of flour, eggs, salt, and water.
Add remaining cup of flour. You may need to add more until it cleans the sides of the bowl.
Knead for ten minutes.
Let rest for ten minutes.
Sprinkle with more flour. Roll out into rectangle as thin as you can manage.
Slice into strips of the desired length and thickness with pizza cutter OR use pasta press if you have one. Leave on counter to dry while making soup.
