Chocolate Zucchini Muffins With Emmer Flour

Ingredients

  • 2 Bananas Mashed
  • 2 C. Finely Grated Zucchini
  • 1/3 C. Nut Butter
  • ⅓. С. Honey
  • 2 t. Vanilla
  • 2 t. Pumpkin Pie Spice - heaping
  • 1/4 с. Cасао
  • 1 t. Soda
  • 1 t. Salt
  • 1/3 C. Dark Choc. Chips
  • 1/3 C. Rolled Oats
  • 2 Eggs
  • 1 C. Emmer Berries - ground

Instructions

  • Preheat Oven to 350°
  • Grate zucchini and press out the extra water using a wire strainer or cheesecloth.
  • Using a whisk, combine wet ingredients in a mixing bowl.
  • In a separate bowl, combine all dry ingredients.
  • Combine wet and dry ingredients and scoop into muffin tins.
  • Bake for 28 minutes. Cool for five minutes before serving.
  • Indulge in a guilt free chocolate treat with these muffins!
