Delicious Apple Pie Cookie Bars with Spelt Flour

Ingredients

Cookie crust:

  • 1 cup butter
  • 2/3 cup coconut sugar
  • 1 ½ tsp. vanilla
  • ½ tsp. salt
  • 350 grams Spelt flour

Apple filling:

  • 4-5 medium apples
  • 50 grams Spelt flour
  • 1/3 cup coconut sugar
  • 2 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • 2 T. maple syrup

Crumble topping:

  • 1 cup rolled oats
  • 2/3 cup coconut sugar
  • 100 grams Spelt flour
  • ½ tsp. cinnamon
  • ½ cup of softened butter

Instructions

For the Crust

  • Combine softened butter with other ingredients and press evenly across the bottom of a greased 9x13 pan. Bake for 15 minutes at 300 degrees. As this bakes, move on to the apple layer

For the Apple Filling

  • Peel the apples, and slice them very thin. Mix all the ingredients in a bowl until the apples are fairly evenly coated. Spread the apples over the baked cookie crust.

For the Crumble topping

  • Combine the streusel ingredients until they form a nice crumbly mixture, and sprinkle across the apples. Bump the oven up to 350 degrees and bake for about 30 minutes, until the top of the streusel starts to show some golden brown.

Serving

  • For serving, these bars are delicious served warm with caramel drizzled over the top and a scoop of vanilla ice cream. You can also refrigerate them with caramel drizzled on, and enjoy them cold!
  • For a simple caramel recipe, I heat a cube of butter, 1 cup of sugar (I usually use coconut sugar, but other options work as well), and ½ cup of cream. Heat slowly at first, stirring often. Then bring to a boil and boil for 2-3 minutes stirring constantly. Take off heat, let cool a little, and enjoy!
