Einkorn Chicken Noodle Soup

Soup
- 1 batch Einkorn noodles
- 1 white onion diced
- 2 clovers garlic minced
- 2 tbsp coconut oil
- 2 cup carrots sliced
- 2 cup celery sliced
- 2 quart chicken broth
- 1 quart water
- 2 can shredded chicken 24oz
- 1 tbsp dried parsley
- salt to taste
- 1/2 tsp pepper
Noodles
Mix 1 1/2 cups of flour, eggs, salt, and water.
Add the remaining cup of flour to the dough. You may need to add more until it cleans the sides of the bowl.
Knead the dough for ten minutes.
Let it rest for ten minutes.
Sprinkle the dough with more flour. Roll it out into rectangle as thin as you can manage.
Slice the rolled out dough into strips of the desired length and thickness with a pizza cutter OR use a pasta press if you have one. Leave the noodles on the counter to dry while making the soup.
Soup
Sauté the onions and garlic in coconut oil.
Add the carrots, celery, chicken broth, and water to the onion and garlic.
Bring to a boil. Let it boil until the vegetables are cooked.
Add the noodles, chicken, parsley, salt, and pepper and let it boil until the noodles are cooked.
For best results measure the Organic Einkorn Flour in grams using a kitchen scale
