Nearly 2 decades ago, we learned about ancient einkorn—the original wheat that humanity first cultivated. We set a goal to one day offer a truly delicious and wholesome einkorn pasta, grown and milled right here in America.

Today, we proudly introduce the result of that vision: Grand Teton Ancient Grains Certified 100% Organic Einkorn Linguine.

Why We Started Making Pasta

We didn’t start making Linguine for the marketplace; we started for our kitchen table. We wanted to feed our family the best—a delicious, clean pasta direct from our farm and mill, featuring the wholesome goodness of God’s original wheat. We decided to go back to the very first grain and do it right, from the ground up.

Doing it Right: From Our Farm to Your Fork

Every single pasta begins with regenerative organic einkorn semolina direct from our family farm and mill in Teton, Idaho.

  • Regeneratively Grown Organic: We are dedicated to growing nutritious and delicious foods using regenerative organic practices, including rotating crops, planting companion crops, and using cover crops. These practices make our soils get richer and that means better food!
  • Clean Promise: This commitment means we use no chemicals and no glyphosate. The result is verified with our seals: Certified 100% USDA Organic, Non-GMO, Glyphosate-Free and OU Kosher Certified.
  • Stone-Milled for Flavor: After harvest, we stone-mill the einkorn ourselves at our on-farm mill. Unlike modern roller that extract the bran and germ, our slow-turning stones keep flavor and nutrition intact.

The Artisan Difference

That fresh, golden einkorn semolina then enters our small pasta facility where it becomes Linguine using the old-world artisan style:

Italian Bronze Cut: We insist on bronze Linguine dies. Why? Because the rough, porous surface of the Linguine grabs sauce like nothing else. Teflon-smooth supermarket pasta lets sauce slide off; our bronze-cut strands drink it in. One twirl and you’ll taste the rich difference our methods make.

We were among the very first to grow einkorn on American soil for sale in America, proving that the highest quality, most traceable, and most delicious food can come directly from a family farm right here in the U.S.

Today we tried the linguine with a fresh tomato raw salsa. It was amazing! My sister couldn’t stop raving about it and texted me when she got home to once again say how good it was.

So happy you came out with a line of pastas made with your ancient grains! Delicious! I made a small 1-2 serving recipe and they turned out perfect at first boil. I didn't realize that they would take less time to boil so I just kept checking the noodles every few minutes for the "al dente" texture. Up until trying the Einkorn pasta, I had been using Buckwheat Soba noodles for a healthier pasta myself. To me, the Einkorn Linguine Pasta is a lighter pasta than the Soba Noodles but makes for a tasty mix up for noodle/pasta lovers. P.S Not knowing that you used a special bronze cutter for your pasta texture - I did notice the difference in how the sauce stayed on the noodles!

Ancient Grains wheat, noodles and customer service is worth a 5+ stars but 5 is as high as I can go! The wheat has an amazing taste. We tried the noodles for the first time for my birthday shrimp scamp. YUM!

First use with the Einkorn linguine was exceptional! Made a lemon-garlic shrimp pasta and loved it. It’s very much like the rustic pasta I smuggle in my luggage from Italy. And it’s good for you!

  1. I purchased the linguine for the first time recently and we really enjoyed it. I made a family favorite recipe so we could really compare it to regular pasta. It turned out wonderfully! I will say it has its own flavor profile, but we enjoyed it! I did notice it cooks up much like brown rice pasta, so you really want to pay attention to it while it boils, I think one too many minutes and it could be over done and mushy. Very flavorful and satisfying when done properly. It is a bit pricey, but when you weigh that against the quality and nutritional value it’s a no brainer!

  2. Delicious einkorn linguine with great texture. It cooks evenly and pairs perfectly with any sauce. Will definitely buy again!

  3. Very well packaged. We don’t eat a lot of pasta – purchased this to share with other family members. Haven’t received any comments yet.

Can we mix the types of pasta to create 8 bags and obtain the same rates in shipping and price per #? We love the spiral pasta and would like to purchase 4 bags of the linguine and 4 bags of the spaghetti. ROBERT D WOOD asked on April 26, 2026

My pasta is breaking into pieces as I cook it. Am I doing something wrong? Gregory Downey asked on February 25, 2026

The gluten in Einkorn is weak (that's why we like it) but it is also fragile when the pasta is dry. If you cook it wrong it will crack and break.

We make this pasta often (and love it) with little breakage. The key to success is how it is cooked.

4 tips for preventing einkorn linguine pasta from breaking while cooking:

  1. Most Important: Do NOT stir immediately. Let the pasta sit in the boiling water for 45-60 seconds to soften up before you gently stir it. Only stir 2-3 times max while it is cooking.
  2. Start Small: Remember, this is a 2lb bag of pasta. Typically, you’ll want to cook about half a bag at a time. Cook in two batches for best results (unless you have a very big pot and need to cook it all at once). Give it plenty of water to reduce breakage.
  3. Don’t Overcook: Start checking if it's "al dente" (perfectly cooked) super early, like after 2 or 3 minutes, so it doesn't turn to mush.
  4. Sauce ASAP: Never let the cooked pasta sit there naked on a plate! Since it cooks fast and gets sticky, it's best to cook the einkorn pasta right before serving so you can toss it with the sauce immediately.

Great question! The pasta can be stored in the paper bags in your cupboard or pantry. The shelf life is one year.

Our Fresh Milling Process

To ensure every batch of Einkorn flour meets the highest standards of baking-ready quality and freshness, we developed a unique 8-stage state-of-the-art grain-cleaning gauntlet.

From there, the Einkorn enters our stone mill where fine flour is freshly milled, then sifted to remove most of the bran, ensuring a light, beautiful all-purpose organic flour.

This way, you know our flour is fresh as it gets.

And because it is stone milled, it still contains the all-important Einkorn germ, loaded with healthy vitamins and antioxidants.
