I love the flavor of the Khorasan wheat Ancient Grains grows! It is a mild almost buttery tasting wheat with no bitter finish at all. Makes wonderful quick breads and sweet recipes and can be used 100% with recipes that don’t need a strong gluten network. It also adds a mild sweetness to my yeasted breads. I replace about 15% of my hard winter wheat berries with Khorasan in my sandwich bread recipe and definitely improves the flavor without affecting the rise. The I used a Khorasan berries and Einkorn berries mixture for my fresh flour for bread and baking. The bread was absolutely delicious! It was a little different to work with then hard wheats, but I LOVED it!!! The flavor was far superior. I also made muffins and wheat thins so good! It is a new house hold staple.
