I have been baking with Einkorn for a long time - using Einkorn grains from a different company. I thought those were the best grains for all of these years until I tried the ones from Grand Teton. Just by milling the grains alone I knew that these are different grains - better actually - as the flour felt very creamy and the color was interestingly very vivid. I bake low hydration as with Einkorn too much water is simply detrimental as you either need more flour or fat to manage the dough. Not here. I finally figured out how to not need but a tiny bit of coconut oil for the surface and I can shape the dough into a boule with my bare, not wet hands. I am so happy I gave them a try - ordered twice already and it won’t be my last order. Excellent customer service, fast shipping and simply amazing Einkorn I will never be without. I normally don’t leave reviews but it is my absolute pleasure to do so here. Long fermentation, cold proofing, loaf after loaf just simply yumminess. Not sure what else to say here. They understand how to grow Einkorn the way it’s supposed to be and I don’t think I’ve ever digested anything this perfectly as a good ‘ol Sourdough Einkorn Bread that is a staple in my home and yes, I eat that whole loaf myself within a week. Thank you for everything Grand Teton 🌸

When I first received my Einkorn berries I thought the grains smelled like horse feed. Kind of like grass/hay. We made a loaf of 100% Einkorn bread and after it cooled a bit I tasted it. Wasn't in love with the taste at first. It was a bit bland BUT after letting it rest overnight the smell and taste was absolutely fabulous. Somehow overnight the taste mellowed out to a buttery nutty flavor that is wonderful. My absolute favorite grain now!

Love the quality. Just started an einkorn sourdough starter in order to make bread for a relative who is gluten free,but einkorn is exceptional for people who don't eat wheat products. I made English muffins with the sourdough discards.

If I buy a Mockmill to grind Einkorn berries will this grind to be whole grain einkorn flour or all purpose einkorn flour? Shelby Lenoue asked on February 16, 2026

It would be whole grain flour. If you sift out the bran with a 40-60 mesh sieve, then it will be like our all-purpose flour.

For 1 cup of einkorn berries there are 35g of protein and 16g of fiber.

How can you plant these berries to grow more? Colby Vlietstra asked on January 1, 2026

The hull has been removed, and this process can cause a drop in germination. That said you can expect a 40-60% germination rate, however, a portion of the seeds that do germination do tend to have lack vigor.

Our Fresh Milling Process

To ensure every batch of Einkorn flour meets the highest standards of baking-ready quality and freshness, we developed a unique 8-stage state-of-the-art grain-cleaning gauntlet.

From there, the Einkorn enters our stone mill where fine flour is freshly milled, then sifted to remove most of the bran, ensuring a light, beautiful all-purpose organic flour.

This way, you know our flour is fresh as it gets.

And because it is stone milled, it still contains the all-important Einkorn germ, loaded with healthy vitamins and antioxidants.
