What is soft white wheat?

Organic soft white wheat is the pastry wheat of the Northwest. It is lower in protein than our hard white and hard red spring wheats, with a tender gluten structure and a mild, slightly sweet flavor. Freshly milled, it makes fine, powdery flour for pastries, pie crusts, cookies, muffins, biscuits, and other bakes that should stay tender instead of chewy.

Although it is not an ancient grain, customers asked us for a pastry wheat grown to the same standard as our ancient grains. A good friend grows this crop on his Organic dry farm in Idaho without herbicides, pesticides, or manufactured fertilizers. We then test it to confirm it is glyphosate free.
