We started making this Einkorn Spaghetti for one simple reason:
We wanted to feed our family a delicious and clean pasta direct from our family farm and mill, with all the wholesome goodness of God’s original wheat.
So we went back to the very first wheat humanity ever grew—einkorn—and decided to do it right, from the ground up.
That’s why every single grain in your box comes direct from our family farm in the Teton, Idaho. No chemicals. No glyphosate—ever. It’s made with regeneratively grown organic einkorn so that means we rotate crops, plant companion crops, and grow cover crops so the soil gets richer every year instead of poorer. The result? Certified 100% USDA Organic, Non-GMO, and Kosher. This isn’t just a label to us—it’s proof we’re leaving the land better than we found it.
After harvest, we stone-mill the einkorn ourselves at our on-farm mill. Modern roller mills heat and damage the grain; our stones turn slowly and keep every drop of flavor and nutrition intact. That fresh, golden semolina then enters our small pasta facility where it is made into pasta using the old-way artisan style—through bronze spaghetti dies.
Why Bronze Cut Spaghetti?
Because the rough, porous surface grabs sauce like nothing else. Teflon-smooth supermarket pasta lets sauce slide right off. Our bronze-cut spaghetti strands? They drink it in. One twirl and you’ll taste the difference.
You have four perfect cuts to choose from:
-
- Spaghetti – sturdy, satisfying, the everyday hero
- Linguine – broad enough to carry clams, pesto, or carbonara like a dream
- Angel Hair – delicate strands that cook in 2–3 minutes and turn simple butter or broth into something magical
- Fusili – Coming soon! Short, curly pasta for salads and entrees!
Every package is slow-dried at low temperatures so the pasta keeps its nutrients, its fresh-wheat aroma, and that incredible nutty-sweet flavor einkorn is famous for. And because einkorn has a different gluten structure than modern wheat, many people who bloat with regular pasta tell us they feel light and happy after our bowls.
We’re a family that believes real food should heal—both people and the planet. That’s why we still do every step ourselves: seed, soil, mill, bronze die, drying rack, and finally your table.
Order one cut and fall in love… or grab the Trio Pack (Spaghetti + Linguine + Angel Hair) and save.
Either way, you’re not just buying pasta.
You’re joining a quiet revolution: bringing back the original wheat, rebuilding soil one harvest at a time, and putting the purest, most delicious noodles possible on your fork.
From our family to yours—thank you for caring where your food comes from.

All forms of this pasta are yummy. Tastes great with tomato, cream, and butter sauces.
I bought 4 bags of angel hair and four bags of spaghetti and was so excited to have healthier options without having to make it myself. I tried the spaghetti last night and it just fell apart while cooking. I knew it was fragile so I carefully added the whole strands to the pot. After a full two minutes I returned to stir it and what wasn’t already broken, broke into small pieces, I tried one of the pieces and it was still hard in the center so it hadn’t overcooked. Not sure what happened but I wasn’t interested in a bowl full of small pieces of noodles I dumped it down the sink, I might try to use them in soup or something since I can’t return them but I’m really disappointed.
I just got a call from a very nice staff member named Gregory. He was kind enough to send a replacement for the spaghetti. I definitely understand in shipping things can come a bit undone depending on the way it is handled; and he stayed on the phone with me to check on the other unopened bags because he was going to send replacements for those as well, if they were not full intact but they were! Now realizing they have a 100% satisfaction guarantee, ideally I could have just given them a call initially and it would have been addressed. Being a customer of theirs for a while now, I’m happy to amend my review to reflect such outstanding customer service! Thank you Ancient Grains!
I’m sorry I was not satisfied with this product; because it was mostly all broken up, at the bottom in the new bag, it was small strands. I did manage to get a few intact long strands but so many broke as it was delicate. It’s not about the taste, it’s the lack of being able to eat the pasta as spaghetti.
Enjoyed the taste and my stomach was not upset.
