Description

Organic Einkorn Fusilli Pasta — From Our Family to Yours

We started making this organic einkorn fusilli for one simple reason: we wanted to feed our family a delicious, clean pasta straight from our family farm and mill — packed with all the wholesome goodness of God’s original wheat.

So we went back to einkorn — the very first wheat humanity ever grew — and decided to do it right, from the ground up.

Why Choose Fusilli Einkorn Pasta?

Fusilli’s signature spirals have delighted pasta lovers for centuries. The name comes from the Italian word fuso, meaning “little spindle,” because traditional fusilli were handmade by wrapping dough around a thin rod. Originating in southern Italy, these tight coils create endless nooks and crannies that hug sauce like no other shape.

That makes bronze-cut einkorn fusilli incredibly versatile. Toss it with hearty Bolognese, creamy garlic sauce, bright pesto, or spicy arrabbiata. Bake it into cheesy casseroles, stir it into soups, or serve it cold in vibrant pasta salads with olives, roasted peppers, fresh veggies, chicken, or sausage. Hot or cold, one shape delivers endless meals.

Direct From Our Family Farm & Mill in Teton, Idaho

Every grain in your box comes directly from our family farm and on-farm mill in the Teton , Idaho. No chemicals. No glyphosate — ever.

We grow it regeneratively and certified 100% USDA Organic, Non-GMO, and Kosher. By rotating crops, planting companions, and using cover crops, we rebuild the soil instead of depleting it. We do all of this to build nutrient-rich, non-toxic, and delicious foods for our family and customers.

Stone-Milled On-Farm for Maximum Whole Grain Flavor & Nutrition

After harvest, we stone-mill the einkorn ourselves at our on-farm mill. Modern roller mills heat and damage the grain; our stones turn slowly and keep every drop of flavor and nutrition intact. This pasta is made from true whole-grain einkorn semolina flour, retaining the nutritious bran, germ, and endosperm of the ancient grain. That fresh, golden whole-grain semolina then enters our small pasta facility, where it’s shaped the old-fashioned artisan way.

Why Bronze-Cut Fusilli?

The rough, porous texture created by traditional bronze dies grabs and holds sauce in every curve and crevice. Smooth supermarket pasta lets sauce slide off — but our bronze-cut organic einkorn fusilli drinks it in. One forkful and you’ll taste the difference. Perfect for pasta salads, baked dishes, hearty sauces, and quick weeknight meals.

Slow-Dried at Low Temperatures

Every batch is gently slow-dried to lock in nutrients, fresh-wheat aroma, and einkorn’s famous nutty-sweet flavor.

Einkorn is Easier on Digestion

Einkorn has a simpler, weaker gluten structure than modern wheat. Many people who feel bloated after regular pasta tell us they feel light and satisfied after enjoying ours, like they do when they eat pasta while travelling in Italy.

We Control Every Step — Seed to Table

From seed and soil to stone mill, bronze die, drying rack, and your kitchen, our family farm and mill handles it all. We believe real food should heal both people and the planet.

4 Cuts Available:

We offer our einkorn pasta in four fabulous cuts: Linguine, Angel Hair, and Spaghetti — or grab the Quad Pack (Fusilli + Spaghetti + Linguine + Angel Hair) and save.

Important Cooking Tips

Einkorn’s gentle gluten makes the pasta more delicate than conventional varieties. Follow these tips for perfect results every time:

  1. Don’t stir immediately. Let the pasta sit in boiling water 45–60 seconds to soften before you gently stir. Only stir 2–3 times total.
  2. Start small. This is a 2 lb bag — cook about half at a time in plenty of water for best results.
  3. Don’t overcook. Start checking for al dente at just 2–3 minutes.
  4. Sauce immediately. Einkorn pasta cooks fast and gets sticky, so toss it with your sauce right away — never let it sit bare.

You’re not just buying pasta. You’re joining a quiet revolution: bringing back the original wheat, rebuilding soil one harvest at a time, and putting the purest, most delicious noodles possible on your fork.

From our family to yours — thank you for caring where your food comes from.

Could you please add a mixed bundle case that contains equal amounts of each type of pasta? I would absolutely buy that frequently. And I bet others would also. Thank you for producing a wonderful product that has literally saved my son and improved his quality of life. I have not purchased bread products in a year i have your einkorn cookbook and the waffles are the best!!! I tag your farm a lot online. Terri Garrett asked on July 11, 2026

Thanks for the feedback. We do plan to offer a mixed bundle at a discounted price in the future. Keep an eye out for that!

Are the grains soaked prior to manufacturing to reduce phytates? James asked on June 29, 2026

No, doing so would reduce their shelf life. If soaking is desired, we recommend soaking be done just prior to use by our customers.

Our Family And Team at Grand Teton Ancient Grains

Our Mission

Since 2009 our family's been on a bootstrapped quest to restore healthier ancient grains to the American dinner table.

Today, we've grown to employ people throughout our small Idaho community.

Your support means a lot to everyone here at our family farm and mill.

A Different Kind of Gluten

Einkorn is an ancient grain that has a different kind of gluten, a “good gluten,” with a simpler chromosomal thumbprint.

Customers tell us they and their families find Einkorn much easier to digest than industrialized modern wheat.

Milling Process

Our Fresh Milling Process

To ensure every batch of Einkorn flour meets the highest standards of baking-ready quality and freshness, we developed a unique 8-stage state-of-the-art grain-cleaning gauntlet.

From there, the Einkorn enters our stone mill where fine flour is freshly milled, then sifted to remove most of the bran, ensuring a light, beautiful all-purpose organic flour.

This way, you know our flour is fresh as it gets.

And because it is stone milled, it still contains the all-important Einkorn germ, loaded with healthy vitamins and antioxidants.
