We started making this organic einkorn fusilli for one simple reason: we wanted to feed our family a delicious, clean pasta straight from our family farm and mill — packed with all the wholesome goodness of God’s original wheat.
So we went back to einkorn — the very first wheat humanity ever grew — and decided to do it right, from the ground up.

We grow it regeneratively and certified 100% USDA Organic, Non-GMO, and Kosher. By rotating crops, planting companions, and using cover crops, we rebuild the soil instead of depleting it. We do all of this to build nutrient-rich, non-toxic, and delicious foods for our family and customers.
Stone-Milled On-Farm for Maximum Whole Grain Flavor & Nutrition
After harvest, we stone-mill the einkorn ourselves at our on-farm mill. Modern roller mills heat and damage the grain; our stones turn slowly and keep every drop of flavor and nutrition intact. This pasta is made from true whole-grain einkorn semolina flour, retaining the nutritious bran, germ, and endosperm of the ancient grain. That fresh, golden whole-grain semolina then enters our small pasta facility, where it’s shaped the old-fashioned artisan way.

Important Cooking Tips
Einkorn’s gentle gluten makes the pasta more delicate than conventional varieties. Follow these tips for perfect results every time:
- Don’t stir immediately. Let the pasta sit in boiling water 45–60 seconds to soften before you gently stir. Only stir 2–3 times total.
- Start small. This is a 2 lb bag — cook about half at a time in plenty of water for best results.
- Don’t overcook. Start checking for al dente at just 2–3 minutes.
- Sauce immediately. Einkorn pasta cooks fast and gets sticky, so toss it with your sauce right away — never let it sit bare.
