Description

Organic Einkorn Harvest Pasta — Sunflower and Einkorn Wheat Shapes from Our Family Farm

We made this organic einkorn Harvest Pasta for the same reason we make every other cut: we wanted a clean, flavorful pasta for our own table, grown and milled on our family farm from God’s original wheat.

Harvest Pasta is our seasonal short cut: a mix of sunflower-shaped and einkorn wheat-shaped pieces, bronze-cut and slow-dried from stone-milled einkorn semolina. The shapes look like they belong on a fall table. They also work all year in soups, salads, skillet dinners, and weeknight bowls.

Why These Shapes Work

Short pasta with open petals and wheat-ear ridges gives sauce more to hold onto. The sunflower pieces catch pesto, brown butter, and roasted-tomato sauce. The einkorn wheat pieces add a little chew and look right in minestrone, chicken soup, or a harvest pasta salad with squash, kale, and toasted nuts.

Use it anywhere you would reach for farfalle, campanelle, or a festive mixed shape:

  • Brown butter, sage, and Parmesan
  • Roasted vegetables and olive oil
  • Creamy mushroom or garlic sauce
  • Brothy soups and stews
  • Cold pasta salads
  • Baked dishes for a crowd

Kids notice the shapes. Grown-ups notice the flavor.

Direct From Our Family Farm and Mill in Teton, Idaho

Every grain comes from our regenerative organic family farm and on-farm mill in Teton, Idaho. No chemicals. No glyphosate. Ever.

We rotate crops, plant companions, and keep the ground covered so the soil gets richer instead of poorer. That work is why this pasta is Certified 100% USDA Organic, Non-GMO, and Kosher. The seals are proof, not decoration.

Stone-Milled On-Farm for Whole-Grain Flavor

After harvest, we stone-mill the einkorn ourselves. Modern roller mills heat the grain and strip it down. Our stones turn slowly and keep the bran, germ, and endosperm in the flour. This is true whole-grain einkorn semolina, then shaped in our small pasta room.

Why Bronze-Cut Matters

Italian bronze dies rough the surface so sauce clings instead of sliding off. That matte, slightly dusty look on the uncooked pieces is the point. Combined with slow drying at low temperatures, the pasta keeps einkorn’s nutty-sweet flavor and a firm bite when you do not overcook it.

Einkorn Is Easier to Digest for Many

Einkorn has a simpler gluten structure than modern wheat. Many customers who feel heavy after regular pasta tell us they feel better after ours. That is their experience, not a medical claim. What we can say for sure is the ingredient list: 100% organic einkorn semolina flour. No fortification. No extras.

We Handle Every Step

Seed, soil, mill, bronze die, drying room, bag. Our family farm and mill keeps custody of the grain the whole way. That is what farm to table means here.

Limited-Time Cut

Harvest Pasta is offered while this run lasts, packed in a 2 lb recyclable paper bag. Eight bags fill the box for free delivery.

Ingredients: 100% Organic Einkorn Semolina Flour. Contains wheat.

Important Cooking Tips

Einkorn pasta is more delicate than conventional pasta. Follow the bag and you will get a better bowl:

  1. Use a large pot and plenty of water. Cook about half a bag at a time.
  2. Do not stir for the first 45–60 seconds. Then stir gently 2–3 times only.
  3. Start checking for al dente at 5 minutes. The bag range is 5–8 minutes. Do not walk away.
  4. Drain and toss with sauce right away. Einkorn gets sticky if it sits bare.

From our family to yours. Thank you for caring where your food comes from.

Our Family And Team at Grand Teton Ancient Grains

Our Mission

Since 2009 our family's been on a bootstrapped quest to restore healthier ancient grains to the American dinner table.

Today, we've grown to employ people throughout our small Idaho community.

Your support means a lot to everyone here at our family farm and mill.

A Different Kind of Gluten

Einkorn is an ancient grain that has a different kind of gluten, a “good gluten,” with a simpler chromosomal thumbprint.

Customers tell us they and their families find Einkorn much easier to digest than industrialized modern wheat.

Milling Process

Our Fresh Milling Process

To ensure every batch of Einkorn flour meets the highest standards of baking-ready quality and freshness, we developed a unique 8-stage state-of-the-art grain-cleaning gauntlet.

From there, the Einkorn enters our stone mill where fine flour is freshly milled, then sifted to remove most of the bran, ensuring a light, beautiful all-purpose organic flour.

This way, you know our flour is fresh as it gets.

And because it is stone milled, it still contains the all-important Einkorn germ, loaded with healthy vitamins and antioxidants.
