We started making this Einkorn Spaghetti for one simple reason:

We wanted to feed our family a delicious and clean pasta direct from our family farm and mill, with all the wholesome goodness of God’s original wheat.

So we went back to the very first wheat humanity ever grew—einkorn—and decided to do it right, from the ground up.

That’s why every single grain in your box comes direct from our family farm in the Teton, Idaho. No chemicals. No glyphosate—ever. It’s made with regeneratively grown organic einkorn so that means we rotate crops, plant companion crops, and grow cover crops so the soil gets richer every year instead of poorer. The result? Certified 100% USDA Organic, Non-GMO, and Kosher. This isn’t just a label to us—it’s proof we’re leaving the land better than we found it.

After harvest, we stone-mill the einkorn ourselves at our on-farm mill. Modern roller mills heat and damage the grain; our stones turn slowly and keep every drop of flavor and nutrition intact. That fresh, golden semolina then enters our small pasta facility where it is made into pasta using the old-way artisan style—through bronze spaghetti dies.

  4. The pasta tastes great and I am more than happy with the product and my ability to eat it without reacting. Having had to rely on corn/rice gluten free versions for many years it was nice to have “real” pasta flavor for a change, I will definitely purchase again.

Is this einkorn pasta made with whole grain einkorn flour or all purpose einkorn flour? Larae asked on February 28, 2026

Our organic einkorn pasta starts with stone-milled einkorn from our family farm and mill, ground into a semolina-style flour ideal for pasta production. This is true whole grain flour, retaining the nutritious bran, germ, and endosperm of the ancient grain.
We shape it into classic forms like linguine, spaghetti, angel hair, and fusilli using traditional Italian bronze dies, followed by a gentle slow-drying process. The result? Why is my pasta breaking when I cook it? What am I doing wrong? Gregory Downey asked on February 25, 2026

The gluten in Einkorn is weak (that's why we like it) but it is also fragile when the pasta is dry. If you cook it wrong it will crack and break.

We make this pasta often (and love it) with little breakage. The key to success is how it is cooked.

4 tips for preventing einkorn spaghetti pasta from breaking while cooking:

  1. Most Important: Do NOT stir immediately. Let the pasta sit in the boiling water for 45-60 seconds to soften up before you gently stir it. Only stir 2-3 times max while it is cooking.
  2. Start Small: Remember, this is a 2lb bag of pasta. Typically, you’ll want to cook about half a bag at a time. Cook in two batches for best results (unless you have a very big pot and need to cook it all at once). Give it plenty of water to reduce breakage.
  3. Don’t Overcook: Start checking if it's "al dente" (perfectly cooked) super early, like after 2 or 3 minutes, so it doesn't turn to mush.
  4. Sauce ASAP: Never let the cooked pasta sit there naked on a plate! Since it cooks fast and gets sticky, it's best to cook the einkorn pasta right before serving so you can toss it with the sauce immediately.

They will store on the shelf for the duration of the shelf life. To extend it, store in vacuum seal.

Our Fresh Milling Process

To ensure every batch of Einkorn flour meets the highest standards of baking-ready quality and freshness, we developed a unique 8-stage state-of-the-art grain-cleaning gauntlet.

From there, the Einkorn enters our stone mill where fine flour is freshly milled, then sifted to remove most of the bran, ensuring a light, beautiful all-purpose organic flour.

This way, you know our flour is fresh as it gets.

And because it is stone milled, it still contains the all-important Einkorn germ, loaded with healthy vitamins and antioxidants.
