I love the flavor of the Khorasan wheat Ancient Grains grows! It is a mild almost buttery tasting wheat with no bitter finish at all. Makes wonderful quick breads and sweet recipes and can be used 100% with recipes that don’t need a strong gluten network. It also adds a mild sweetness to my yeasted breads. I replace about 15% of my hard winter wheat berries with Khorasan in my sandwich bread recipe and definitely improves the flavor without affecting the rise.
