Beautiful, fresh, clean grains that always mill into soft, fine flour! I have used spelt for pizza crust, muffins, biscuits, bread, coffee cake, waffles, noodles, crackers, tortillas, all the things! Currently playing with French pastry and made a half dozen Gâteau Breton with Ancient Grains spelt. If einkorn doesn't fit in your budget, spelt is a great choice and is easier to handle.

I purchased the spelt berries to use in making the Ezekiel bread. I haven't been able to make the Ezekiel bread yet, I am planning on it. But I have used the spelt grains in many recipes. I usually mix the grains in recipes like focaccia/ pizza,in order to get the various nutrients from the various grains. I make savory pancakes and crepes or omelettes if I am out of bread. Or Biscuits. I don't always take photos. But I am very happy with the quality of the grains and am planning on another order. I would have ordered already but watching my budget.

Grand Teton ancient grains sells fresh clean wheat berries which I appreciate. You won't see any chaff or other contamination in their products. The spelt grains made delicious pancakes on our first attempt!
