Here’s how it works:

  1. You place your order.
  2. On our next milling day (we mill a few times per week), we’ll mill your flour in our stone mill.
  3. That fresh flour ships out to you via 2-day shipping. (read below for shipping details)
  4. You receive your flour and start baking or store it for use later (see FAQ for more info about storage)

Side Note About Home Milling

We love this flour but it’s even better when you mill your own flour from our einkorn berries. If possible, we recommend that you mill your own flour at home. Flour milled at home is more affordable – it allows you to buy whole grains for less and store the grains for the long term.

I could have used some recipes for einkorn sourdough. As it turned out, it was a very comical post on Facebook as my hands looked like Big Birds due to the sticky mess. And the loaves were dense and didn't taste good, either, so I'm not likely to spend a lot of money buying more. I have become a pretty consistent, good sourdough maker and I was so excited to try einkorn after watching a video that showed how much healthier the ancient grains were to medieval people. If I have to blend it with white flour to make it act better, look better and taste better, it defeats the purpose. I'm sitting on a half bag of whole grain einkorn, not knowing what I'll do with it. The einkorn sourdough has been a huge hit with my family. This is my first venture into bread making and has been perfect so far. 3 loaves and they only made it a couple days each. There was a minor mix up with my order and they took care of me very quickly. %100 looking forward to trying some other Ancient Grains products.

Since 2009 our family's been on a bootstrapped quest to restore healthier ancient grains to the American dinner table.

Today, we've grown to employ people throughout our small Idaho community.

Milling Process

Our Fresh Milling Process

To ensure every batch of Einkorn flour meets the highest standards of baking-ready quality and freshness, we developed a unique 8-stage state-of-the-art grain-cleaning gauntlet.

From there, the Einkorn enters our stone mill where fine flour is freshly milled, then sifted to remove most of the bran, ensuring a light, beautiful all-purpose organic flour.

This way, you know our flour is fresh as it gets.

And because it is stone milled, it still contains the all-important Einkorn germ, loaded with healthy vitamins and antioxidants.
