Quick and easy banana bread with a delicious crumble topping made with nutritious Organic Whole Grain Einkorn Flour. Eat for breakfast, dessert, or a grab-and-go snack!
Einkorn Banana Bread with a Crumble Topping
Ingredients
For the Banana Bread
- 4 Bananas Mashed
- 1/4 Cup Oil or Melted Butter
- 1/4 Cup Plain Greek Yogurt
- 3/4 Cup Brown Sugar
- 2 Eggs
- 1 1/2 tsp Vanilla
- 2 Cup
Organic Whole Grain Einkorn Flour (or grind 1 Cup Organic Einkorn Berries) - 1 tsp Baking Soda
- 1/2 tsp Baking Powder
- 3/4 tsp Salt
- 2 tsp Cinnamon
- 1/2 Cup Nuts or Chocolate Chips
For the Crumble Topping (Optional)
- 1/4 Cup Freshly Milled Einkorn Flour
- 1/4 Cup Brown Sugar
- 1/2 tsp Cinnamon
- 2 Tbsp Butter
Instructions
For the Banana Bread
- Mix all wet ingredients, including the bananas, in a medium sized bowl.
- Mix the dry ingredients in a separate bowl.
- Add the dry ingredients to the banana mixture and stir just until combined.
- Pour the batter into a greased 9×5 bread pan and let it rest for 10 minutes.
For the Crumble Topping
- Combine the crumble topping ingredients with your fingers until it is coarse and crumbly.
- Sprinkle the Crumble Topping on top of the banana bread mixture.
Baking
- Bake at 350 for 50-65 minutes, or 20-25 minutes for muffins.
- It is done when a toothpick or knife inserted in the center comes out clean, or with a few moist crumbs.
- This recipe makes a 9×5 loaf or 15 muffins.

Is the Brown Sugar consider a “wet ingredient” in this recipe, to added with the “wet” ingredients?

Either way would probably be fine, but including it in the wet ingredients is perferable. That will give the sugar a chance to disolve.
